Trout, an Easy Fish to Cook
Trout (brook, rainbow, or brown) is one of the most enjoyable fish to cook: fine flesh, few bones once prepared, and quick cooking. Freshly caught, it only needs a few ingredients to shine.
Golden rule, as with any lean fish: do not overcook it. As soon as the flesh is opaque and flakes, it's ready.
Preparing the Trout
- Gut the trout and rinse the cavity.
- To cook it whole, keep the skin (it protects the flesh and is edible).
- For fillets, cut them along the bone and pat dry.
- Dry the skin with paper towels: it will become crispy.
Recipe 1 — Pan-Fried Trout with Lemon Butter
Ingredients (2 servings): 2 whole trout or 2 fillets, flour, salt, pepper, 2 tbsp butter, 1 drizzle of oil, 1/2 lemon, parsley or dill.
- Salt, pepper, and lightly flour the trout.
- Heat the pan over medium-high heat with the oil and butter.
- Cook 3-4 minutes skin side down, then flip and cook 2-3 minutes.
- Drizzle with lemon juice, add herbs, serve.
Recipe 2 — Oven-Baked Trout with Herbs
Place the trout in an oiled dish, stuff the cavity with lemon slices, garlic, thyme, and dill, drizzle with olive oil, and salt. Bake 15-20 minutes at 200 °C (400 °F) depending on size. Perfect for cooking multiple trout at once.
Recipe 3 — BBQ Trout in Foil
The camping option. Place the trout on a double sheet of aluminum foil with butter, lemon, onion, and herbs. Seal tightly and cook 10-15 minutes on the grill over medium heat, flipping halfway through.
Side Dishes
Baby potatoes, lemon rice, grilled vegetables, or simply a salad and bread. A squeeze of lemon is essential.
